Vegetarian Food – Spinach Dumplings
At the moment I’m spending my last days in Austria and that made me think that I should try and make some Austrian dishes before leaving (most of them I already prepared them once but I failed to take pictures) The first dish I’ll present you are Spinach Dumplings. They are easy and fast to prepare!
Ingredients:
- 220 gr. spinach (I use deep frozen one, for fresh one you actually need more)
- 200 gr. dumpling bread (I don’t know if you can buy this outside of Austria or the southern part of Germany if you can’t buy it, buy some buns, let them get hard and then cut them in small cubes of 1 cm)
- A handful of flour
- Salt
- Nutmeg
- 125 ml of milk
- 2-3 eggs
- 20-30 gr. of Butter
- 2-3 spoons of parmesan
Put the dumpling bread in a bowl, mix the milk with the eggs and put the salt and nutmeg in. Put the spinach into the bowl with the dumpling bread and pour the milk/egg mix over it. Now mix this well till you have some sort of a dough. Put some flour into the mix so that the dough will better bind together.
Now form the dough into balls and cook them around 5-10 minutes.
Before serving pour some melted butter and parmesan over them.

Vegetarian Food – Cucumber Noodles
Last time I had half a cucumber left from a cucumber salad I made the day before. And as I didn’t want to eat yet another salad but something more filling I thought that I could prepare the cucumber like a salad but use it as a noodle sauce.
What do we need for the cucumber noodles ?
- Cucumber (a small one or half of a big one)
- Yoghurt
- Garlic
- Dill
- Salt & Pepper
- (Fresh chilli – if you like to eat spicy)
- Noodles
Start with cooking the noodles as actually you will be done with all the rest before they are ready. Then put a pot of yoghurt into a bowl (a big one as you should add the noodles in it too when they are done), cut the garlic, the chilli and the cucumber. Put them into the bowl, you can now already add salt and pepper. When the noodles are done put them in the bowl and stir.

P.S: You can also leave the noodles out and eat it as a salad, or even try it with rice (I might try that out one of these days)

Vegetarian Food: Vegetarian Chilli
This is a dish I prepare rather often as it is easy to do and you can vary it a lot. I won’t give instructions on how much you need from every ingredient, best is to cook as much as you want to eat. And for the spices just spice it as much as suits you.
Ingredients you absolutely need:
- Chilli
- Tomatoes (you could even let them aside if you don’t have any or don’t like them
) (here I usually use a small can and some tomato concentrate) - Salt
- Pepper
- One of the following:
- Beans <-> Lentils <-> Chickpeas (usually I take a 500gr can)
Optional stuff :
- Tofu or Mock meat (or both if you like, the best mock meat I lately found is the one from Linda-Mccartney and I usually buy the tofu in an asian supermarket as I prefer the asian tofu)
- Corn
- Cumin
- Paprika powder
- Garlic
- Onions
As side dish I usually prepare rice or noodles. And if you like to have it creamy you can put some yoghurt or sour cream on it at the table (Sour Cream adds a special note to the dish I really love).
First I usually fry the onions with some garlic and the chillies. Then I put in a can of tomatoes and sometimes some fresh tomatoes, and also some cumin and Paprika Powder. At this point you can and should add some water.
While I let this cook I fry the Tofu or mock meat (most of the time I put a chilli in here too and some cumin and paprika powder).
Now you can put in the Beans/Lentils/chickpeas and the corn into the pot the tomatoes are boiling in. Finally add the mock meat/tofu.
